The best corn you have every had. This Spicy Korean Corn - Instant Pot Korean Corn is delicious dip made with frozen corn, mayonnaise, shredded mozzarella cheese, sugar, black pepper, and crushed red pepper. Moreover, It makes an awesome appetizer sure to satisfy any dip craving.
2 and 1/2cupsfrozen yellow sweet corn(12 oz pack) (340 gms) (no need to thaw)
1cupshredded mozzarella cheese(4 oz)
1 and 1/2tspsugar
3/4tspcrushed red pepper(chili flakes), (you can increase or decrease as per taste)
4cupswater(to pressure cook the corn)
Place the frozen corn in the inner pot. Further add in 4 cups water to the inner pot. Close the lid on the instant pot and select manual/high pressure. Pressure cook the corn for 5 minutes. Quick release the pressure. Discard the water and place the pressure cooked corn back in the inner pot.
Add mayonnaise, shredded mozzarella, sugar, crushed black pepper and crushed red pepper to the pressure cooked corn. Stir well until the cheese melts.
Transfer to a serving bowl and serve immediately as a side to chips.
I haven't added salt. You can add salt if you need it.
