Ingredients
  

  • 4 medium potatoes (722 grams/ 1.5 pounds)
  • 1 onion (1 cup finely chopped)
  • 1 tomato, small (1 cup finely chopped)
  • 1 tomato small, pureed (1/2 cup pureed)
  • 3 garlic cloves, minced (1/2 tbsp minced)
  • 2 green chillies, finely chopped (3 tbsp finely chopped)
  • 1/2 tsp black salt
  • 1 tsp kashmiri chili powder
  • 3/4 tsp chaat masala
  • 1 tbsp lemon juice
  • 1 tbsp mustard oil
  • 1/4 cup cilantro, finely chopped
  • 1 tsp salt

Method
 

Prep
  1. Boil the potatoes until fork-tender. I used the instant pot and cooked them on high pressure for 12 minutes with natural pressure release.
  2. Rinse and chop the onions, tomatoes, cilantro, and green chillies finely. Third puree 1 small tomato. Finally, mince the garlic.
Mix
  1. Peel the boiled potatoes and mash them. They need to have some texture and don't need to be super fine.  Furthermore, add in chopped onions, chopped tomato, pureed tomato, minced garlic, chopped green chillies, black salt, Kashmiri chili powder, chaat masala, lemon juice, mustard oil, cilantro,and salt. Mix well. That's all. Finally, Aloo Chokha is ready. Enjoy with roti or rice.
