Indian Mashed Potatoes – Aloo Bharta

Ingredients
  

  • 5 potatoes, yukon gold medium (1 pound 4.5 oz) (2 and 1/2 cups mashed)
  • 1/4 onion (finely chopped)
  • 2 serrano peppers, small, finely chopped (1/2 tbsp)
  • 3/4 tsp ground cumin
  • 3/4 tsp ground coriander    (dhaniya powder)
  • 1/2 tsp  red chili powder     (cayenne pepper)
  • 1 tsp salt
  • 1/4 cup cilantro leaves
  • 2 tbsp unsalted butter
  • 1/2 tsp  mango powder      (amchur/amchoor powder)

Method
 

  1. First rinse and boil potatoes. I use Russet or Yukon Gold to make mashed potatoes. Add the whole potatoes to large pot of boiling water and cook for 20 to 30 minutes or until fork goes through potato easily. Additionally, you can also use the instant pot to boil the potatoes. (8 minutes’ manual for diced 2 inch cubed potatoes).
  2. Rinse and chop the onions and cilantro finely.
  3. Once boiled, drain the water and peel the potatoes. Moreover, mash the potatoes with a hand masher or a spoon.
  4. Further add in onions, green chilies, spices (ground cumin, ground coriander, red chili powder), salt, and butter. Finally add in the chopped cilantro, mango powder (amchur) and mix well.
