Rinse all the fruits and veggies. (Mango's, bell-pepper, red onion, tomatoes, cilantro, and jalapeno). Moreover, the mangoes should be chopped very finely, not more than half inch cubes. Chop the bell-pepper, red onion, tomato, cilantro and jalapeno finely as well.
Combine all ingredients in a large bowl. Mix well. Chill covered for 15 minutes to an hour to allow the flavors to meld (if you don’t have the time, don’t worry, it will still be delicious). Serve with your favorite tortilla chips, grilled meat, or fish, chicken, on tacos, burritos, salads or eat as is. Serves 4.
