Spicy Okra with Peanuts - Air Fryer Bhindi

This Spicy Okra with Peanuts - Air Fryer Bhindi recipe is ready in under 20 minutes! With a bag of frozen okra and a few spices from your pantry, this quick and easy side dish is a no-brainer when you're short on time. Pairs well with any barbeque or Indian meal.

Ingredients
  

  • 1 and 1/2 tbsp oil of choice
  • 2 cups okra, frozen (no need to thaw)
  • 1/4 tsp salt
  • 3/4 tsp red chili powder  (cayenne pepper)
  • 1/2 tsp ground coriander (dhaniya powder)
  • 1/4 tsp ground cumin  (jeera powder)
  • 1/2 tsp mango powder  (amchur/amchoor powder)
  • 1/4 tsp ground turmeric
  • 1/4 cup roasted and salted peanuts, like planters (crush them)

  • 1 Instant Vortex Plus 6 Quart 6-in 1 Air Fryer

Method
 

  1. Firstly, in a mixing bowl, mix salt, red chili powder (cayenne pepper), ground coriander, ground cumin, mango powder (amchur powder), ground turmeric, and 1 and 1/2 tbsp oil well. Further, add in the okra and stir well until the okra is coated with spices.
  2. Coarsely grind the roasted and salted peanuts and set aside.
  3. Additionally, grease the air fryer basket with some oil and preheat at 350°F for 5 minutes. When the air fryer is preheated, place the okra in a single layer. Set the time and temperature (350°F for 9 minutes). (specific notes for Instant Vortex are in the notes)
  4. Finally, when done toss and air fry again 380°F for 4 minutes. Alternatively, if you don’t want it super crispy and brown you can air fry only for 2 minutes. Top off with roasted, salted, crushed peanuts.

Notes

For the Instant Vortex Plus 6 Quart 6-in 1 Air Fryer  basket grease the air fryer basket with some oil or spray.
Select Air fry at 350°F for 9 minutes. When display reads add food, add the okra and place tray in the center position.
When display reads turn food, shake the basket with okra.
When done, air fry again 380°F for 4 minutes. When display indicates turn food do nothing.
Serve immediately when done.
On a scale of 1 to 5 in terms of spice levels, I would place this at 3.5. Reduce the red chili powder if you can tolerate heat.
