  • 1/4 cup mint leaves (pudeene kee pattiyaan)
  • 1 tbsp plain greek yogurt
  • 1 serrano pepper (green chili)
  • 1 tsp lemon juice (freshly squeezed or bottled)
Marinade

Method

  1. Blend all the ingredients listed under cilantro filling into a fine paste in a blender.
  2. Chop the paneer into 2 to 3 inch pieces. Slit each piece of paneer horizontally from the center. It doesn't need to be slit all the way, just ¾ th to accommodate the filling. Make sure not to slit the whole paneer.
  3. Fill the individual slits in each paneer with cilantro chutney. Don't overfill. Make sure it doesn't overflow.
  4. For the marinade, Mix 1 tbsp oil with all the other ingredients listed under marinade except paneer. Stir well.
  5. Add the chutney stuffed paneer in the marinade and coat it well. Let it sit in the marinade for 30 minutes at room temperature.
  6. When you are ready to cook, rub inside of air fryer basket with the remaining oil.
  7. Preheat the air fryer at 350°F for 5 minutes.
  8. Once it is preheated, add paneer one piece at a time and place it in the air fryer basket in a single layer. Discard the left over extra marinade. Do not overcoat the paneer with it.
  9. Air fry at 370°F for 6 minutes. Flip the paneer gently with silicone kitchen tongs and air fry for another 2 minutes.
  10. Remove the paneer from the air fryer and serve.
