I used Jin Ramen instant packet ramen. You can use any ramen pack of choice.
Place the ramen noodles and spray them with cooking oil on each side. This will help achieve a crisp texture when air fried.
Place the sprayed ramen noodles in the Air Fryer basket and cook them at 375°F for 3 minutes on each side. The air fryer will give the noodles a satisfying crunch.
Once done and cool, gently crush the air-fried ramen noodles into smaller pieces.
In a separate bowl, prepare the salad dressing by combining minced garlic, rice vinegar, honey, soy sauce, salt, and pepper. Whisk the ingredients together until well combined.
In a large mixing bowl, add the coleslaw mix or shredded cabbage, red cabbage, and carrots. Include the finely chopped green onions for an extra punch of flavor.
Pour the prepared salad dressing over the coleslaw and green onions. Further, toss the ingredients gently to ensure an even coating.
Sprinkle the salad with toasted slivered almonds and pumpkin seeds. These crunchy toppings add a delightful nuttiness to the dish.
Add the broken air-fried ramen noodles into smaller pieces using your hands and sprinkle them over the salad. This step adds the perfect crispy element.
Give the salad a good mix, ensuring that all the flavors and textures are evenly distributed.
