Prep
- Scrub the potatoes well. Peel and cut each potato lengthwise into 3/8-inch-thick slices. Slice sections into sticks also about 3/8 inch-wide. Rinse the potatoes well and let them sit in a bowl covered with water for 30 minutes (this step is optional but it results in crispy fries). Further drain the water.
Cook
- Place the drained fries into a large bowl. Add truffle oil, salt, paprika; stir until evenly combined.
- Next, transfer fries to the Air Fryer basket. Spread the cut potatoes in a single layer in the air fryer basket with a little space between each one. Don’t cram them in. You will have to work in batches. I made mine in 3 batches.
- Then, air fry for 15 to 20 minutes, at 350 degrees F. After the first 8-10 minutes, toss the fries in the basket (be careful as it’s hot) so all pieces get nice and crispy. Finally after 15 to 20 minutes, open the fryer add in parmesan cheese and air fryer for an additional one minute. You will have to split the parmesan, cheese evenly among the batches you make.
- Transfer the fries to a bowl and serve hot.
Notes
Every air fryer is different. Make sure to check after the 15 minute mark or else the fries can get overcooked.
I have used yukon gold potatoes however you can use Russet as well.
Truffle oil is available on amazon or in grocery stores.
