Ingredients
  

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 tsp  baking soda 
  • 1/4 tsp salt
  • 1/4 cup plain yogurt
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 and 1/2 tsp vanilla extract
  • 3 ripe bananas (1 and 1/4 cups, mashed)
  • 1 cup blueberries, fresh

Method
 

  1. In a large bowl, whisk together flour, sugar, baking soda and salt. Set the mixture aside.
  2. In another bowl, whisk together yogurt, vegetable oil, eggs, vanilla extract, and mashed bananas to combine.
  3. Meanwhile, preheat the air fryer at 310°F for 5 minutes.
  4. Next, gently fold the banana mixture into the dry mixture and stir with a spatula until just combined. Additionally, make sure no dry flour is visible. Do not overmix.
  5. Fold in the blueberries into the batter until just combined but evenly distributed.
  6. Prepare the pan with greasing the base and the sides with oil using a brush.
  7. Next, fill the prepared pan evenly with batter.
  8. Once the air fryer is preheated, place your cake pan in the air fryer basket.
  9. Close the air fryer basket and set the time and temperature at 310°F for 40 to 45 minutes. Moreover, turn the pan halfway through the air frying process so that it gets evenly cooked. Finally, to check for doneness, insert a toothpick into the center and make sure it comes out clean. Lastly, let cool completely, before turning the bread into a plate.

Notes

Every air fryer is different. Please start checking for doneness at the 35 minute mark, just to make sure if doesnt get ovedone.
