Ingredients
  

For the peppers
  • 8 oz Shishito peppers (227 grams)
  • 1 tbsp extra virgin olive oil (or avocado oil)
  • 3/4 tsp Kosher Salt
For the Spicy Yogurt Dip
  • 1/2 cup Greek yogurt
  • 1/2 lime juice (1 and 1/2 tbsp of lime juice)
  • 1 garlic cloves, minced (1/2 tsp)
  • 1 tbsp chopped cilantro
  • 1/4 tsp ground cumin
  • 1/4 tsp red chili powder
  • 1/4 tsp salt

  • 1 Cast Iron or other pan

Method
 

Prep
  1. Rinse the peppers thoroughly under cold running water to remove any dirt or debris. Pat the peppers dry with a clean towel or paper towel.
Cook
  1. Heat  oil in a cast-iron pan over medium-high heat, then add in the whole peppers. Next, cook until the peppers have charred spots, then turn them over and blister the other side for about 6 to 7 minutes total. Stir once or twice through the process. Finally, sprinkle the peppers with salt and stir. Transfer to a serving bowl.
Spicy Yogurt Sauce
  1. For the dipping sauce, combine Greek yogurt, the juice of half a lime, minced garlic clove, finely chopped fresh cilantro, ground cumin, salt, and red chili powder. Mix well.
