Prep
- Rinse the peppers thoroughly under cold running water to remove any dirt or debris. Pat the peppers dry with a clean towel or paper towel.
Cook
- Heat oil in a cast-iron pan over medium-high heat, then add in the whole peppers. Next, cook until the peppers have charred spots, then turn them over and blister the other side for about 6 to 7 minutes total. Stir once or twice through the process. Finally, sprinkle the peppers with salt and stir. Transfer to a serving bowl.
Spicy Yogurt Sauce
- For the dipping sauce, combine Greek yogurt, the juice of half a lime, minced garlic clove, finely chopped fresh cilantro, ground cumin, salt, and red chili powder. Mix well.
