Methi Malai Palak Corn - Creamy Corn

Methi Malai Palak Corn - Creamy Corn is the perfect easy side dish recipe. It is easy enough for a weeknight meal, but delicious enough to grace your party table. So this dish is creamy and full of texture and we love pairing it with things like roti, or paratha.

Ingredients
  

  • 340 grams frozen spinach (I used great value bag from Walmart)
  • 305 grams frozen corn (I used birdseye brand)
  • 2 tbsp oil of choice
  • 1 onion (1 cup onion, finely chopped)
  • 1 tsp cumin seeds
  • 2 green chilles (2 tsp chopped)
  • 1 tsp ground turmeric   
  • 4 tbsp kasuri methi dried fenugreek leaves 
  • 1 and 1/2 tsp salt
  • 1 small tomato, pureed (1 cup puree)
  • 1/2 cup heavy whipping cream
  • 1/2 tsp garam masala
  • 1/4 cup cilantro
  • 1/2 cup water
  • 1 tsp ginger garlic paste 

Method
 

Prep
  1. Rinse and chop the onions, cilantro, green chillies.
  2. On medium heat in a deep wok add oil and cumin seeds. Once the seeds pop, add in onions, green chillies and ginger garlic paste. Let the onion cook until they are translucent, stirring intermittently.
  3. Add in frozen spinach, frozen corn, ground turmeric, salt, tomato puree, and 1/2 cup water, and stir well. Furthermore, cover and cook for 10 minutes until corn is cooked. 
  4. Add in heavy whipping cream, dried kasuri methi, garam masala and cook for another minute uncovered. Finally top off with cilantro and turn off heat. Enjoy with roti or rice.
