Kashmiri Saffron Tea Chai - Kesar Chai s a comforting warm drink that’s brimming with antioxidants. It’s a popular Kashmiri beverage that is soothing. Kashmiri Pandits typically consume three types of tea, which include Kehwa (a type of green tea) , Sheer Chai and saffron tea.

Ingredients
  

  • 4 cups water
  • 20-25 saffron strands 
  • 1 cinnamon stick 2 inch piece   (dalchini)
  • 1/4 tsp ground cardamom    (elaichi powder)
  • 1 and 1/2 tbsp slivered almonds (plus a few more to top off)
  • 1 and 1/2 tbsp sugar (you can reduce or eliminate as per taste)

Instructions
 

Prep

  • Using a mortar and pestle coarsely crush the cinnamon stick.

Cook

  • Place 4 cups water and in a small saucepan and bring the water to boil on high heat.
  • Add in saffron strands, crushed cinnamon, ground cardamom and slivered almonds.
  • Further let it boil for a minute. Next turn off the heat and cover with a lid for about a minute. Finally transfer in a cup and top off with additional almonds.
  • This tea is supposed to be sweet however you can reduce the amount of sugar as per your taste. Moreover, you can also eliminate the sugar if you like.
