Prep
  1. Rinse and peel the potatoes. Chop them to 2 inch cubes.
Cook
  1. On medium heat, in a deep wok or skillet add oil. When the oil is hot add cumin seeds, urad dal, and chana dal.
  2. In 30 seconds add the potatoes and stir well. Further, add in turmeric powder, and salt and stir.
  3. Add a lid and cook covered for 15 minutes on medium heat, until potatoes are cooked and crispy. Keep stirring in between every few minutes to prevent them from burning.
  4. Once done open the lid and add coriander powder, Kashmiri chili powder, cumin powder, and garlic powder. Stir well and turn off heat in a minute. Enjoy
