Prep
- Thaw the cooked frozen and deveined shrimp for about 10 minutes.
- Break the eggs in a bowl and whisk with a fork.
- Chop the onions, serrano pepper, cilantro, and tomatoes.
- Add all the ingredients except the oil and the lemon juice to the bowl with whisked eggs.
Cook
- Heat oil in a non-stick frying pan on medium-heat. When the oil is hot, add the egg mix in the pan.
- Distribute the egg mixture evenly across the pan.
- Cook for about 3 to 5 minutes on medium-heat until the edges are brown and the omelette can be lifted and turned easily.
- Flip it over and cook on the other side. It needs to be well cooked.
- Transfer the cooked omelette in a plate.
- Sprinkle the omelette with lemon juice.
Serve
- Serve the cooked omelette hot with ketchup, or sriracha and bread.
Notes
- Ground cayenne pepper and red chili powder can be used interchangeably as both of them make the dish spicy. So if you don’t have red chili powder you can use cayenne pepper instead.
