Spicy Masala Shrimp Omelette

Spicy masala omelette is a regular street food in India, known as omelette pav (omelette with bread). I ate it regularly on the streets of Mumbai. It is often served with cilantro chutney or ketchup.
I personally love shrimp and try to think of different ways to use it in my cooking. I bought some frozen cooked shrimp from Costco and thought of using it in my standard omelette recipe. I used cooked shrimp so that I did not have to worry about cooking it before putting it in the omelette.
The experiment worked! It turned out so great. The spices, cilantro clubbed in with the shrimp, onions, and tomatoes makes the omelette so flavorful and delicious!

You can eat this with siracha, cilantro chutney, or ketchup.

Ingredients
  

  • 1/4 cup onion finely chopped (white, yellow, or red)
  • 1/2 serrano pepper finely chopped (green chili pepper)
  • 1.5 tbsp fresh cilantro finely chopped (dhainya ke patte)
  • 1/4 cup tomato finely chopped
  • 1/4 tsp red chili powder

    (ground cayenne pepper)
    (optional)
  • 1/4 tsp ground turmeric

    (haldi)
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

  • 2 eggs
  • 4 frozen pieces of cooked shrimp tail off peeled and deveined (thawed)
  • 2 tsp vegetable oil
  • 1/2 tsp lemon juice

Method
 

Prep
  1. Thaw the cooked frozen and deveined shrimp for about 10 minutes.
  2. Break the eggs in a bowl and whisk with a fork. 
  3. Chop the onions, serrano pepper, cilantro, and tomatoes. 
  4. Add all the ingredients except the oil and the lemon juice to the bowl with whisked eggs.
Cook
  1. Heat oil in a non-stick frying pan on medium-heat. When the oil is hot, add the egg mix in the pan. 
  2. Distribute the egg mixture evenly across the pan.
  3. Cook for about 3 to 5 minutes on medium-heat until the edges are brown and the omelette can be lifted and turned easily.
  4. Flip it over and cook on the other side. It needs to be well cooked.
  5. Transfer the cooked omelette in a plate.
  6. Sprinkle the omelette with lemon juice.
Serve
  1. Serve the cooked omelette hot with ketchup, or sriracha and bread.

Notes

  • Ground cayenne pepper and red chili powder can be used interchangeably as both of them make the dish spicy. So if you don’t have red chili powder you can use cayenne pepper instead.
