Thai Chicken with Scallions - Easy Thai Chicken with minimal ingredients. This is a quick and easy recipe using boneless chicken thighs or chicken breast.

Ingredients
  

  • 1.5 pounds boneless chicken, breast or thigh
  • 2 tbsp oil of choice
  • 1 bunch scallions (1 cup chopped) (spring onions)
  • 8 garlic cloves (2 tbsp minced)
  • 3 tbsp ground fresh chili paste  ( I used Sambal Oelek found in the Asian aisle)
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1/2 tbsp brown sugar

Method
 

Prep
  1. Chop the chicken to bite size pieces about 1/4 to 1/2 inch cubes.
  2. Rinse and chop the scallions to batons (2 to 3 inches). Discard the edges of the scallions. Mince the garlic finely in a motor and pestle.
Cook
  1. In a deep wok add in oil of choice on medium heat.
  2. Add in minced garlic and fresh ground chili paste. Mix well and let it get fragrant for about 30 seconds.
  3. Add in the chicken and let it cook for 10 minutes until slightly brown and cooked.
  4. Add in the oyster sauce, soy sauce, brown sugar, and stir well. Let it saute for a minute to 2 minutes.
  5. Add in the scallions and let it cook for another minute. Turn off the heat and enjoy with white rice.
