Prep
- Chop the chicken to bite size pieces about 1/4 to 1/2 inch cubes.
- Rinse and chop the scallions to batons (2 to 3 inches). Discard the edges of the scallions. Mince the garlic finely in a motor and pestle.
Cook
- In a deep wok add in oil of choice on medium heat.
- Add in minced garlic and fresh ground chili paste. Mix well and let it get fragrant for about 30 seconds.
- Add in the chicken and let it cook for 10 minutes until slightly brown and cooked.
- Add in the oyster sauce, soy sauce, brown sugar, and stir well. Let it saute for a minute to 2 minutes.
- Add in the scallions and let it cook for another minute. Turn off the heat and enjoy with white rice.
