Thai Chicken with Scallions – Easy Thai Chicken with minimal ingredients. This is a quick and easy recipe using boneless chicken thighs or chicken breast. The thing about this recipe is that it may not be the authentic real deal directly from Thailand, but it is incredible. Enjoy this explosion of flavor over white rice for a quick and easy weeknight dinner ready in 10 minutes!

When it comes to international cuisine, I have a soft spot for Asian food – especially Thai and Vietnamese food. I love the robust, rich flavors that kindle your taste buds without being particularly spicy. So lets give this recipe a try.

Ingredients needed to make Thai Chicken with Scallions – Easy Thai Chicken

  • Boneless chicken breasts or thighs (We prefer boneless, skinless chicken thighs because they lend more flavor, but chicken breast is delicious, too).
  • 8 garlic cloves (2 tbsp minced)
  • Red chilli paste (3 tbsp)
  • 2.0 tbsp oil of choice
  • 1 tbsp oyster sauce (Adds even more depth of flavor and balances out the sweet, and spicy taste).
  • 1 tbsp soy sauce
  • 1/2 tbsp brown sugar (A hint of sweetness to balance out the spice)
  • 1 bunch scallions

Method to make this recipe –

Be sure to prep all of the ingredients before you start cooking, as it all comes together quickly.


First, chop the chicken to bite size pieces about 1/4 to 1/2 inch cubes. Second rinse and chop the scallions to batons. Discard the edges of the scallions. Third mince the garlic finely in a motor and pestle.

When you are ready to cook in a deep wok add in oil of choice. Further, add in minced garlic and Thai red chilli paste. Mix well and let it get fragrant for about 30 seconds. Furthermore add in the chicken and let it cook for 10 minutes until slightly brown and cooked. Further, add in the oyster sauce, soy sauce, brown sugar, and stir well. Let it saute for a minute to 2 minutes. Then add in the scallions and let it cook for another minute. Turn off the heat and enjoy with white rice.

Ingredients
  

  • 1.5 pounds boneless chicken, breast or thigh
  • 2 tbsp oil of choice
  • 1 bunch scallions (1 cup chopped) (spring onions)
  • 8 garlic cloves (2 tbsp minced)
  • 3 tbsp ground fresh chili paste  ( I used Sambal Oelek found in the Asian aisle)
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1/2 tbsp brown sugar

Instructions

  • Add in the oyster sauce, soy sauce, brown sugar, and stir well. Let it saute for a minute to 2 minutes.
  • Add in the scallions and let it cook for another minute. Turn off the heat and enjoy with white rice.
