Prep
- Chop the chicken to 2 to 3 inch cubes. Extract the onion juice and garlic juice, using a blender, a grater or a juicer. Blend the onion and garlic together then pass it through the sieve pressing the onion downward. Collect the juice in a bowl and discard the pulp.
- In a mixing bowl, add in the yogurt, add in the onion and garlic juice, 1 tbsp oil, kosher salt, spices (ground black pepper, cayenne pepper, ground cumin, and paprika), and tomato paste. Mix well. Furthermore add in the chicken and mix well.
- Cover the marinated chicken bowl with a lid. Marinate the chicken for 30 minutes to an hour. Additionally you can also marinate it overnight in the refrigerator.
Cook
- When you are ready to cook, grease your Air Fryer basket with 1 tbsp oil. Then, follow your air fryer directions for preheating to 350°F for 5 minutes. When it’s preheated, working in batches, place the chicken in a single layer or in a skewer.
- Air fry for 18 minutes, at 360°F. When 8 minutes are remaining, flip the chicken gently with tongs and drizzle some oil. Also, every air fryer is different so check after the 15-minute mark. You can increase or decrease the time as per your liking.
- Finally, Using a meat thermometer ensure that the chicken has reached an internal temperature of 165ºF before serving.
- Drizzle the kebab with oregano.
Notes
You can place the kebabs directly on the air fryer tray if you dont want to use a skewer.
You can also make this in a grill pan on heat. Grill them evenly on all sides, about 12 to 15 minutes or until done.
