What is Kashmiri Tahar Yellow Rice – Instant Pot Turmeric Rice?

Kashmiri Tahar also known as Tehri is typically prepared by Kashmiri pandits on festivals and is offered as Naveed (Prashad). Kashmiri pandits also cook it on Birthdays and offer some rice as prashad, and also to express gratitude or thanksgiving. It is typically paired with spicy potatoes and/or paneer. Additionally, on festivals and birthdays after conducting a pooja, Tahar is distributed as small palm pressed yellow rice balls called ‘Tahari Meitt ’ in Kashmiri. Moreover, before consuming Tahar, a small quantity is offered to birds. Tahar has a huge significance in Kashmiri culture and it is truly a delicious treat.


What ingredients do I need for this recipe?

Long-grain white rice:  Basmati rice serves up a nice fluffy texture, but regular long grain is great, too.

Mustard Oil – Traditionally, this recipe uses mustard oil. However, you can use ghee too. However, if you are using mustard oil, heat it in a pan on medium heat until smoky. This step needs to be done to eliminate the raw smell of mustard oil. However, if you are using ghee you can eliminate this step and add ghee directly to the cooked rice.  

How to I make this recipe?

Prep – Firstly, rinse the rice well until the water runs clear. Secondly soak the rice in 4 cups water for about 10 minutes. This step is key since it makes the rice nice and fully.

Cook – When you are ready to cook, discard the water. Further add the rice in the Instant Pot. Furthermore add 2 and ½ cups water to the inner pot. Next, add in ground turmeric and salt. Stir well.

Furthermore, close the lid and select manual for 6 minutes. Let the pressure release naturally for 5 minutes and then quick release the pressure. Finally open the lid, fluff the rice with a fork, add ghee or smoked mustard oil and mix well.
