To make spicy pepper chicken, you will need the following ingredients:
- 1 and 1/2 pounds of chicken breast, cut into medium-sized pieces
- 1 small onion, finely chopped (about 3/4 cup)
- A tablespoon of minced ginger
- A tablespoon of minced garlic
- 3 green chillies, vertically slit but intact
- 3 teaspoons of crushed black pepper
- 1/2 teaspoon of garam masala
- 1 sprig of curry leaves (about 10-15 leaves)
- 1 teaspoon of ground fennel
- Also, 1 and 1/4 teaspoons of salt
- 3 tablespoons of oil of your choice
Instructions:
- First, wash the chicken and cut it into bite-sized pieces. Drain the chicken in a colander.
- Second, heat 3 tablespoons of oil in a pan. Further, add the finely chopped ginger and minced garlic. Sauté until the raw smell disappears.
- Third, add the finely chopped onion, green chilies, and curry leaves. Sauté the onions until they become translucent.
- Further, add the chicken pieces to the pan. Sauté for 3 to 4 minutes.
- Furthermore, add 1 teaspoon of ground fennel, 3 teaspoons of crushed black pepper, and 1 and 1/4 teaspoons of salt. Mix well and cover the pan. Cook for 5-6 minutes on medium heat.
- Check the pan for water. If it looks dry, add 1/4 cup of water. Cover the pan again and cook for another 6-7 minutes or until the chicken is well cooked. I haven’t added any water.
- Add 1/2 teaspoon of garam masala and mix well. If there is any residual water left, dry it up. Finally, turn off heat.
- Your spicy pepper chicken is ready to be served! Serve it warm with steamed rice, chapatis or naan.

- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1 onion, small (3/4 cup) finely chopped
- 3 green chillies, slit but intact
- 1 sprig curry leaves (10 to 15 leaves)
- 3 tsp ground black pepper
- 1 tsp ground fennel
- 1 and 1/4 tsp salt
- 1/2 tsp garam masala
Instructions
- Wash the chicken and cut it into bite-sized pieces. Drain the chicken in a colander.
- Heat oil in a pan. Further, add the finely chopped ginger and minced garlic. Sauté for 30 seconds to a minute until the raw smell disappears.
- Add the finely chopped onion, green chilies, and curry leaves. Sauté the onions until they become translucent. Stir.
- Add the chicken pieces to the pan. Sauté for 3 to 4 minutes. Stir
- Add ground fennel, crushed black pepper, and salt. Mix well and cover the pan. Cook for 5-6 minutes on medium heat.
- Check the pan for water. If it looks dry, add 1/4 cup of water. Cover the pan again and cook for another 6-7 minutes or until the chicken is well cooked. I haven't added any water.
- Add 1/2 teaspoon of garam masala and mix well. If there is any residual water left, dry it up. Finally, turn off heat. Serve it warm with steamed rice, chapatis or naan.
