Ever since I was young, sooji halwa has been my most-liked dessert. I felt like the luckiest kid on earth when I’d get home from school and there would be a huge bowl of sooji halwa, just waiting for me. We would eat it with puris (a small, round bread made of unleavened wheat flour) or as dessert.


This is my mom’s recipe for Instant Pot Suji Halwa – Semolina Sooji Rava Halwa

What is Sooji / Semolina / Rava / Rawa?

 Sooji, is the word used for semolina in North India and Pakistan. Rawa is the name for semolina in South India. Sooji is a coarse flour made from durum wheat, a hard type of wheat.

What ingredients do I need to make Instant Pot Sooji Halwa – Semolina Sooji Rava Halwa?

Sooji, whole milk, ghee, ground cardamom, slivered almonds, golden raisins, sugar and water.

And, an Instant Pot of course.

The sooji needs to be dry roasted. I typically buy the roasted kind of sooji. It specifically states roasted upma sooji on the packaging. If you don’t have the pre-roasted kind of sooji then you can dry roast the sooji in a pan. Heat the pan on medium heat. Let the pan get hot and then add in sooji. Keep stirring. Once the pan is hot, you need to watch the sooji since it can burn quickly. Keep stirring till all the moisture evaporates and it becomes free-flowing.

Steps to make Instant Pot Sooji Halwa – Semolina Sooji Rava Halwa: 

First, bring water, milk and saffron to a boil in a small bowl for 3 minutes in a microwave.

Next, select sauté on the instant pot and adjust to normal. Then, add in ghee to the pot. When the ghee is hot, add in roasted sooji, and stir well.

Press cancel. 

After that, add in the warm milk + water + saffron mix. Further,  add in slivered almonds, raisins, and ground cardamom (optional). Stir well.

Then add in sugar and give it a good stir.

Close the lid and select manual/high pressure for 4 minutes. When done let the pressure release naturally for 7 minutes. Then quick release the pressure. 

Transfer the cooked halwa to a serving bowl.

Super easy & yummy recipe, thank you! Would you increase the pressure cooking time when making 2 or 3 times the amount of ingredients?
