How to make Chicken Boti Kebab – Air Fryer Chicken Kebab?


 So let’s discuss just how fast you can make this chicken. Basically whip up a quick marinade using Greek yogurt, ginger garlic paste, garam masala, ground cumin, ground coriander, red chili powder (cayenne pepper), oil, salt, onion paste and poppy seed paste, chickpea flour, ground nutmeg, ground cinnamon and lemon juice. Further add chicken to the marinade and mix well.

Next, place a fast lighting charcoal in a stainless-steel bowl. Further, light it and drop a spoon of oil on it. The process will enable the charcoal to catch fire and provide a smoky flavor to the chicken. Once the flame subsides the bowl with marinated chicken will have to be covered.

 Marinate chicken at least 30 minutes, or longer if time permits.

Steps:

 Firstly, dice the chicken to 2-inch cubes.

 

Next grind the onions, poppy seeds, and water into a fine paste in a coffee grinder or spice grinder.

Furthermore, create the marinade in a large bowl by mixing all the ingredients (Greek yogurt, ginger garlic paste, garam masala, ground cumin, ground coriander, red chili powder, 2 tbsp oil, salt, onion paste and poppy seed paste, chickpea flour, ground nutmeg, ground cinnamon, and lemon juice). Add in the chicken and mix well.

 

Additionally, place the stainless-steel bowl with coal in the center of the marinated chicken bowl. Light the coal and slowly add oil. It should catch fire.

Once the fire is minimized it will start releasing smoke. Cover the whole marinated chicken bowl with a lid.

This process imparts a smoky flavor to the chicken. 

When you are ready to cook, grease your air fryer basket with oil. I grease mine by rubbing, brushing, or spraying, a little bit of oil on the bottom grate. Then, follow your air fryer directions for preheating to 350°F for 5 minutes. When it’s preheated, working in batches, place the chicken in a single layer.

 

Air fry for 18 minutes, at 360°F. When 8 minutes are remaining, flip the chicken gently with tongs and drizzle some oil.

Ingredients
  

  • 1.5 pounds boneless chicken  (breasts or thighs)
  • 3 tbsp onion (chopped)
  • 1/2 tbsp poppy seeds
  • 2 tbsp water (to blend onions and poppy seeds)
  • 1/2 cup Greek yogurt (plain)
  • 3/4 tbsp ginger garlic paste   (either freshly minced in equal quantities or store bought)
  • 1 tsp garam masala
  • 1 tsp ground cumin      (jeera powder)
  • 3/4 tbsp ground coriander    (dhaniya powder)
  • 3 tsp red chili powder   (cayenne pepper)
  • 3 tbsp oil of choice (preferably mustard oil) (divided)
  • 1 and 1/2 tsp salt
  • 3 tbsp chickpea flour  (gram flour/besan)
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 2 tbsp lemon juice
  • 1 piece fast light charcoal

Instructions

Boti is more convenient than a knife if you want to cut to sit comfortably on the floor with one leg folded on the wooden base and the other leg stretched.
