Eggs, oil of choice, cumin seeds (jeera), onions, serrano pepper, ginger garlic paste, tomatoes, garam masala, red chili powder, ground turmeric, salt, fresh cilantro leaves, unsalted butter, bread slices, mozzarella cheese, cheddar cheese and crushed red chili pepper.
How will we make this recipe?
Firstly, we will make the eggs in a skillet.
Prep
- Crack and whisk the eggs in a bowl with a fork in a circular motion.
- Wash and finely chop the onions, tomatoes, serrano peppers, and cilantro. Keep them separate on the cutting board.
Cook:
First, heat a pan on medium-heat. Second, When the pan is slightly hot, in about 2 minutes, add oil. Third, in about 30 seconds, add cumin seeds. Next, when the cumin seeds splutter add onions, serrano peppers and ginger garlic paste. Further, sauté the onions until they are golden. Keep stirring in order to prevent them from burning.
Furthermore, add tomatoes and keep sautéing until the oil separates out and the tomatoes are mushy. This step is key to let the raw tomato odor out. Stir every minute or so. This step will take about 3 to 4 minutes.
Then, add garam masala, red chili powder, ground turmeric, salt, and stir constantly.
Next, add the beaten eggs. Stir the eggs every 30 seconds in order to prevent the eggs from sticking to the pan.
Finally, once the eggs are cooked, turn off the heat, add chopped cilantro and stir.
Prep the toast:
When you are ready to cook, aggressively butter one side of each slice of bread with softened butter. Construct your toast by dividing the egg evenly on all the 8 bread slices.
Add in shredded mozzarella cheese first on all the slices and then topping the slices with shredded cheddar cheese.
Air Fry:
Place the bread slices in the Air Fryer basket and make sure they are separated out. If you don’t separate them out the cheese will melt and stick to each other. If your basket is small you can make 2 to 3 toasts at a time and repeat the batch.
Close the basket and set the time and temperature on the air fryer at 330°F for 5 minutes.
Once done, remove from toasts from the air fryer. The cheeses should be melted and slightly brown and the toast should be crisp and golden brown. Finally, place them on a plate, cut in half and experience the magic of deliciousness. Eat right away. If you keep it for too long it will get mushy.

Notes
- On a scale of spice levels of 1 to 5, with 1 being low and 5 being hot, I would place this dish at 3.5. The cheese balances out the peppers, so even though it sounds spicy its not. You can modify the amount of serrano peppers as per your spice tolerance.
- Make sure the butter is softened so that it spreads evenly and easily. To soften butter you can warm it up for a few seconds.
- You can reduce the amount of cheese if you desire.
- If you like it very cheesy you can add more cheese.
- I have used large bread slices. If you use regular it will probably result in more than 6 toasts.
