Gujarati Bhindi – Easy Okra is one of my favorite side dishes. It’s the perfect accompaniment to roti or steamed rice. This recipe has very few ingredients and it’s very easy to make. The pairing of okra and Indian spices is classic.

What ingredients do I need to make Gujarati Bhindi – Easy Okra?
Okra (bhindi), oil, cumin seeds, serrano pepper, salt, ground turmeric and red chili powder.
How do I make this recipe?
In this Gujarati Bhindi – Stir fried Okra recipe, sliced okra is first cooked in the microwave to hasten the cooking process, before being simmered together with spices on medium-heat. Microwaving it on high-heat makes okra’s interior gel reaches high temperatures, its viscosity thins which reduces the slime and enables faster cooking.
Cut Okra:
Wash your tender okra in cool water and drain in a colander. Make sure its dried very well to prevent the slimy texture. Also, don’t wash the okra until right before you are ready to slice and cook it; otherwise, it could get slimy. Dry it well. Also, rubbing your okra dry with a paper towel also helps scrub off some of the fuzzy hairs on the surface of the pods. Further, using a sharp paring knife, slice off the thicker end of the pod. Furthermore, cut off the pointy end of the pod. Then slice the okra crosswise into evenly spaced rounds about 1/2 inch thick each.

Cook:
When you are ready to cook, place the okra in a plate, cover it with a paper towel and let it cook in the microwave for 5 minutes.
Also slit the serrano pepper however, keep it intact.
Then, place a pan or pot on medium-heat. Further add oil to the pan. When the oil is hot, add in cumin seeds.

Furthermore, when the cumin seeds splutter add in the serrano peppers. Additionally, after about 30 seconds add in okra.

Stir well. Next add in salt. Let it sauté for 10 to 15 minutes. Stir continually to prevent sticking to the pan. Moreover, once the okra is cooked midway in about 5 to 8 minutes add in ground turmeric and mix well. Finally add the red chili powder towards the end. Stir well and let it cook for a minute or two. Turn off the flame, transfer to a serving bowl and enjoy with rice or roti.
