This Instant Pot Instant Pot Lauki Halwa – Bottle Gourd – Dudhi Halwa is a fast and an uncomplicated dessert that cooks in just minutes utilizing your electric pressure cooker. I love that it’s naturally gluten-free.

Lauki, milk {whole}, Khoa, sugar (white), slivered almonds, ghee (clarified butter), ground cardamom, golden raisins, rose extract.

How to Make Instant Pot Lauki Halwa – Bottle Gourd – Dudhi Halwa?

The foremost thing that comes to mind about Lauki Halwa  is a delicious, comforting and sweet dessert topped with nuts.

To make it rinse the lauki/bottle gourd well. Use a vegetable peeler to peel the bottle gourd’s green skin. Further, cut it into 6 inch pieces horizontally. Then chop them vertically. Use a paring knife remove some of the seeds if there are too many.

Then using either with a food processor or a hand held grater grate the lauki. You can use the coarse or the fine setting on the hand held grater. In order to grate the lauki, I have used the coarse/larger side of the grater.

Prep:

Firstly, grate the bottle gourd. Once grated, remove the excess water by placing the grated lauki in a colander and either squeezing it or using the back of the spoon to press it.

Secondly, grate the Khoa.

Cook:

When you are ready to cook, select sauté on the instant pot. Add in ghee and slivered almonds.

Add in the grated lauki and let it sauté for about 4 to 5 minutes.

Further add in milk. Stir well. Further, secure the lid on the pot and close the pressure-release valve. Furthermore, select manual and cook at high pressure for 2 minutes.

Once the cooking is complete, use quick pressure release to depressurize. Open the lid.

Select sauté and adjust to normal. Next add Khoa, sugar, ground cardamom, rose extract, and let it sauté for 8 to 10 minutes until the liquid evaporates.

Keep stirring in order to prevent the halwa from sticking to the bottom of the pot.

Finally, transfer in a serving bowl and garnish with golden raisins and also with additional nuts if you like.
