Fortunately, bhindi raita can absolutely be made from scratch; without GMOs and artificial flavors.

What ingredients do I need to make Air Fryer Bhindi – Okra Yogurt Dip?

Plain yogurt, okra (I used frozen), ground cumin, chaat masala, salt, sugar, red chili powder. For the tempering – Oil, cumin seeds, mustard seeds, asafoetida, curry leaves, and whole dried red chilli peppers.

How do I make Air Fryer Bhindi Raita – Okra Yogurt Dip?

Air Fry the Okra- There is no need to thaw. Rub the air fryer basket with a brush and some oil and preheat at 350°F for 5 minutes. When the air fryer is preheated, place the okra in a single layer. Set the time and temperature (350°F for 9 minutes). Finally, when done toss and cook again 380°F for 4 minutes. Alternatively, if you don’t want it super crispy and brown you can air fry only for 2 minutes. Set aside.

Making the Raita –

First, place the plain yogurt in the bowl, and whisk it well until smooth. Further, add in ground cumin, chaat masala, salt, sugar and red chili powder. Mix well. Further add in the air fried okra and mix well and set aside.

Tempering –

In a pan on medium heat add oil. When the oil is hot add in asafoetida,  cumin seeds, and mustard seeds. Once the seeds sizzle add in curry leaves, and whole dried red chilli peppers. Sauté for a minute or two and turn off heat. Add the tempering to the raita.

Place it in the refrigerator and, chill it before serving.

  • 3 cups yogurt, plain
  • 3 cups okra (I used frozen) (bhindi)
  • 1 and 1/4 tsp ground cumin    (jeera powder)
  • 3/4 tsp chaat masala 
  • 3/4 tsp salt
  • 1/2 tsp sugar
  • 2 tsp red chili powder  (cayenne pepper)
