Learn how to make Fried Rice the easy way with this simple Thai Basil Fried Rice – Chicken Fried Rice. This delicious rice is packed with scrambled eggs, seasoned with fish and oyster sauce. It is definitely a dish that all family members will adore.

For best results use leftover rice that is about a day old. Also make sure it’s not hot before frying. Basil leaves have several health benefits as per this article by Webmd.

Ingredients needed to make Thai Basil Fried Rice – Chicken Fried Rice –

  • 6 garlic cloves minced 
  • Thai chilis or green chillies
  • 4 tbsps oil of choice
  • 2 cups boneless chicken breasts or thighs chopped to ¼ inch thick strips 
  • 1 small onion chopped (1 cup chopped)
  • 2 large eggs
  • 1.5 tbsp Thai fish sauce 
  • 3 tbsp Thai oyster sauce 
  • 1 tbsp brown sugar
  • 1/2 cup Thai basil leaves
  • 1/2 tsp salt 
  • 4 and 1/2 cups cooked left over rice (jasmine or long grained)

METHOD –

First, grind or pound the garlic cloves and Thai chillies/green chillies together. Second, chop the chicken to 1/4 inch pieces.
 
COOK –
 
First, in a large large wok over medium heat, add the oil, garlic, and Thai chillies. Second, cook it for about 30 to 45 seconds. Third, add in the chopped chicken and stir well. Cook for about 7 to 8 minutes or until the chicken is brown.
 
Further, add in the onions and cook for about 2 to 3 minutes until they are golden. Furthermore, move the chicken and onions to the side of the pan. Next, crack the two eggs into the middle of the pan and use your spatula to stir the eggs until cooked. Furthermore, stir the eggs and chicken well. 

Then add in the  oyster sauce, fish sauce, and sprinkle the sugar over the chicken mixture until it’s thoroughly incorporated.


Next add in the rice breaking up any chunks and mix well. Cook and stir occasionally for about 2 minutes. Add in the salt, and  the Thai basil. Finally, Stir and cook for 1 minute or until the basil wilts. Enjoy.

Ingredients

  • 1 onion, small (1 cup chopped)
  • 2 large eggs
  • 1.5 tbsp Thai fish sauce
  • 3 tbsp Thai oyster sauce
  • 1 tbsp  brown sugar
  • 1/2 cup Thai Basil Leaves
  • 1/2 tsp salt
  • 4 and 1/2 cups left over cooked Jasmine or long grained rice

Instructions
