How do I make Air Fryer Plantain Chips – Spicy Plantain Fries?

Firstly, peel the plantains right before you are ready to cook. Peeled plantains tend to oxidize quickly.

Score your plantain peels lengthwise with a knife, and then remove the peels. Further, cut your plantains in half, and again cut the halves in half so you get four half cylinders. Slice them into thin strips like fries. Try to be somewhat consistent with the size to allow for even cooking. Also, don’t slice them very thin.

Once you have sliced the plantain, place the strips a mixing bowl, add in salt, red chili powder, and oil. Mix well.

When you are ready to cook, grease the air fryer basket with oil. I grease mine by rubbing, brushing, or spraying, a little bit of oil on the bottom grate (about 1/2 tbsp). Furthermore, follow your air fryer directions for preheating to 350°F for 5 minutes. Finally, when it’s preheated, working in batches, place the plantains in a single layer.

Air fry the fries at 350 degrees F for 12 min or until they are crisp. At the 6-minute market toss and flip them.

Lastly when the cooking is complete transfer the fries to a serving bowl and garnish with chaat masala.

What sort of oil to use?

You can use oil of your choice. I use canola or coconut oil. Any kind of vegetable oil would work. You only need about 2 tablespoons of oil, tossed to coat, in order to help crisp up the plantains and enable the spices to mix well. The remaining oil will be used to grease the air fryer tray.

Where can I find plantains?

In the fresh produce section of the supermarket. They usually resemble large green bananas. Plantains are typically longer than bananas, have thicker skins and cannot be consumed raw. For this recipe we need green plantains that are raw.
