What ingredients do I need to make for Suji Eggless Cake: Air Fryer Tutti Frutti Cake?
Full fat plain yogurt, confectioners sugar, oil, sooji (the fine kind), all purpose flour, full fat milk, vanilla extract, baking powder, baking soda, and tutti frutti.
What is Suji/sooji?
Sooji is granulated wheat and is also known as semolina or rava. People in northern India call it sooji, while people in southern India call it rava. It is also used to make dosa (south Indian pancake). The word semolina is derived from the Italian word semolina, which means bran.
What is Tutti Frutti?
Tutti frutti is a colorful confectionery containing various chopped and candied fruits, or with artificial or natural flavoring. Moreover, tutti frutti ice-creams and cakes are very popular in India. Also, Tutti frutti is easily available in Indian grocery stores or on Amazon. However, if you dont have tutti frutti you can replace it with raisins.
How do I make Suji Eggless Cake: Air Fryer Tutti Frutti Cake?
Firstly using a whisk or a hand blender blend the yogurt well. Secondly add powdered sugar and whisk or blend with a hand blender. Thirdly add oil and whisk or blend.
Further add in suji, all purpose flour and blend or whisk. Furthermore, do not overmix or the cake will turn out densely textured. Next, add 1 cup milk and gently whisk again. Then, cover the batter and let it soak for 15 minutes. This step is key for the suji to absorb all the liquid.
After the 15 minutes are up, add ¼ cup milk, baking powder, baking soda, vanilla extract and tutti frutti. Whisk but don’t over mix.
Grease the cake pan liberally with oil. I typically used a brush to grease the pan.

Pour the batter into greased cake tin and garnish with some extra tutti frutti.
Air Fry:
Follow your air fryer directions for preheating to 330°F for 5 minutes. Place your cake pan in the air fryer basket.

Next close the air fryer and set the time and temperature at 330°F for 26 to 30 minutes. Finally, to check for doneness, insert a toothpick into the center and make sure it comes out clean. Moreover, let cool completely, before turning the cake into a plate.

- 1/2 cup all-purpose

Instructions

- Then, cover the batter with a lid and let it soak for 15 minutes. This step is key for the suji to absorb all the liquid.
- After the 15 minutes are up, add ¼ cup milk, baking powder, baking soda, vanilla extract and tutti frutti. Whisk but don’t over mix. Don't use a hand blender at this step. Use either a spoon or a whisk.
- Grease the cake pan liberally with oil. I typically used a brush to grease the pan, on the base as well as the sides. Pour the batter into greased cake tin and garnish with some extra tutti frutti.
- Follow your air fryer directions for preheating to 330°F for 5 minutes. Once preheated place the tin with batter in the air fryer basket. Close the basket. Set the time and temperature at 330°F for 26 to 30 minutes. Every air fryer is diffrent so check after the 26 minute mark. You can increase the time if it isn’t done.
- Finally, to check for doneness, insert a toothpick into the center and make sure it comes out clean. Moreover, let cool completely, before turning the cake into a plate.
- Enjoy the crispy outside and moist inside cake.
Notes
- I have made this with tutti frutti. You can use raisins if you don’t have tutti frutti.
- Every air fryer is different, so you can check the cake after 26 minutes. If its not done you can increase the timer by another 4 minutes.
- I typically store this in an airtight container on the counter for a day and after that in the refrigerator for about 2 to 3 days.
- You can use either a hand blender or a whisk. If using a hand blender dont blender for long periods. Just about 2 to 3 seconds each time or else the cake will turn out very dense.
- My kids helped me with making this cake as shown in the video. If you do want your kids to help, make sure they work on this with adult supervision only. The air fryer basket should be touched by kids since it can be hot.
