Healthy Cucumber Bites – Cucumber discs with Greek Yogurt is truly an experimental recipe. I was trying to come up with a quick snack and voila here it is. The cucumber is so tender and juicy with a savory and tangy topping that adds so much flavor to the cucumber. Moreover, this recipe truly has a winning combination of being easy and delicious!

What ingredients do I need to make Healthy Cucumber Bites – Cucumber discs with Greek Yogurt?
Greek yogurt, cucumber (1 and 1/2 cup chopped), onion (2 tbsp chopped), tomato (2 tbsp chopped), salt, garlic powder, crushed red pepper, sugar, cilantro, chaat masala, cilantro, and roasted and salted peanuts.
How do I make this recipe?
First, rinse and peel the cucumber and chop it to 1/2 inch circles. Make sure the circles aren’t thick.
Second, rinse and chop the onion, cilantro, and tomato finely. I used cherry tomatoes.
Third, place the plain yogurt in the bowl, and whisk it well until smooth. Further, in the yogurt add in the chopped onion, chopped tomato, garlic powder, sugar, chaat masala, salt, crushed red chili pepper, roasted/salted peanuts and chopped cilantro. Mix well.
Finally, top off the cucumber with the Greek yogurt dip. Serve immediately.

- 1/2 tsp sugar
- 3/4 tsp chaat masala
- 1/2 tsp salt
- 2 tbsp roasted and salted peanuts (I used planters)
- 1 and 1/2 tsp red crushed pepper (chili flakes)
- 1 and 1/2 tbsp cilantro (finely chopped)
