A delicious potato filling with Indian spice flavors makes these delicious Indian Stuffed Bell Peppers – Air Fryer Stuffed Capsicum a healthy and satisfying dish.
Bell peppers come in several colors and are high in nutrient content. For this recipe, you can use any color peppers you like. The peppers in this recipe are literally like little edible bowls your whole family will love!
How do I make Indian Stuffed Bell Peppers – Air Fryer Stuffed Capsicum?
First, prepare the potatoes. Rinse and peel the potatoes. Then chop them into 3-to-4-inch cubes. Keep the potatoes large so they maintain shape. Second boil them.
I used an instant pot. I put 3 cups water and added the potatoes on the trivet. Additionally, I cooked the potatoes on manual/high pressure mode for 5 minutes and quick released the pressure. You can also boil the potatoes in a pot on the stove top. If cooking in a pot, transfer the potatoes to a pot. Cover the potatoes with an inch or two of cold water. Starting the potatoes in cold water helps them cook more evenly. Bring to a boil, then reduce to a simmer. Place the pot over medium-high heat and bring to a boil. Once boiling, reduce the heat to a bare simmer. Do not cover. Check the potatoes in 5 minutes. The potatoes need to be tender. The potatoes should be ready in under 10 minutes.
Further, once boiled, drain the water and peel them. Moreover, mash the potatoes with a hand masher or a spoon.
Prep the bell peppers –
First, rinse, pat dry the bell pepper with a napkin and chop the bell peppers into 2 halves and clean the seeds out of the inside. Also, remove the membrane and make it even.
The filling mixture –
Once the potatoes are ready, add in chopped onions, red chili powder, ground coriander, amchur, ground cumin, chopped cilantro, chopped serrano peppers, salt, and black salt. Mix well.
Divide the filling evenly between the 2 or 3 large bell peppers.
Air Fry –
Further, when you are ready to cook, rub inside of air fryer basket with the oil. Add the bell peppers in the air fryer basket in a single layer. Furthermore, air fryer at 360°F for 10 minutes. Finally, top off with Mozzarella cheese and air fry for another 2 minutes at 360°F until the cheese melts.

Ingredients
- 2 bell peppers, large

- 1 tsp mango powder (amchur/amchoor powder)

- 1 tsp salt
- 1/4 tsp black salt
- 1/4 cup chopped cilantro
- 1/2 cup mozeralla cheese
- 1 tsp oil (for greasing the air fryer)
Instructions

Stove Top or Baking Options
- Stove Top – You can also make these on the stove top. Heat two tablespoons of oil in a pan. Saute them for 2-3 minutes on low heat, then turn slightly so that the other side gets cooked. Keep repeating until every side is cooked well. The entire process should take about 18 to 20 minutes.
- Pre heat the oven at 350 degrees F and bake them for 20 minutes. Add in the cheese and broil for another minute or until the cheese is melted. Keep watching to make sure the cheese doesn't get burnt.
